If you’re tempted by takeout because cooking has become such a pain point you’ll love this quick, flexible stir fry format. Use whatever vegetables you have and your family will eat. 

Sirloin steak is perfect for stir fry. While it may be the underdog of the meat counter, it has wonderful beefy flavor and is much more affordable than other cuts. 

By shaking up the sauce ingredients in a jar with some arrowroot starch you’ll get a thick, sweet and savory sauce that will thicken to coat your vegetables and meat. It is healthy, colorful and easy to make to please the whole family.

Top Sirloin Steaks are juicy and flavorful. The best way to cook them to tender perfection is thinly sliced in a stir fry, or diced into cubes and skewered for kabobs. To prevent any cut of meat from getting tough is to slice against the grain and not overcook it.

Ingredients You’ll Need 

Stir-Fry Sauce: 

  • Orange Juice  – Gives your stir-fry sauce sweetness.
  • Coconut aminos – Adds sweetness, will help coat the vegetables once thickened
  • Tamari – Gluten free Tamari will add more savory* For Whole30 Sub coconut aminos
  • Rice Vinegar– Adds acid to the dish making it well balanced.
  • Ginger – Adds depth and warmth. 
  • Sesame oil – Adds a complex, nutty flavor.
  • Garlic – Adds warmth and subtle power to the dish as it is cooked. 
  • Arrowroot Starch – Creates a chemical reaction to thicken the sauce when heated.
  • Salt & Pepper – Enhances the flavor of all the ingredients.

Stir-Fry Ingredients:  

  • Avocado Oil or another neutral flavored high heat cooking oil
  • Country Natural Beef Top Sirloin Steak – Consistently incredible quality and flavor
  • Asparagus– fresh, seasonal spring bright green vegetable with great texture
  • Shiitake mushrooms – meaty and hearty mushroom that adds so much umami flavor
  • Carrots – nice contrast in the dish in both color and sweet flavor

Recipe Tips & Variations

  • For best results, you’ll want to ensure you are cutting against the grain when thinly slicing the Country Natural Beef top sirloin steak. 
  • To make it Whole30: Simply substitute the tamari entirely with coconut aminos. You may want to reduce the amount of orange juice by ¼ cup since coconut aminos are much sweeter than tamari. 
  • Add or Substitute: any of the vegetables you prefer or need to use! Cook the vegetable(s) you’re adding in the same skillet but likely not at the same time as the mushrooms, carrots or asparagus to ensure they all have the best texture and are cooked properly. Use any mushrooms you want!
  • Troubleshooting the sauce: if it is not thickening, simply dissolve an additional ½ tsp -1 tsp of the arrowroot starch in the jar by shaking it with some of the stir fry sauce and then add back into the skillet. 

Serving Suggestions: 

This Top Sirloin Stir Fry is completely perfect as a meal all on its own. You don’t have to serve it with anything unless you want to. 

It will be delicious over white rice. You can make some in the instant pot, or microwave a bag of frozen white or brown rice once it’s ready to serve to make it easier. 

If you’re doing Whole30 or want to reduce your carbohydrate intake, you can use cauliflower rice or roasted cauliflower florets.

How To Make Top Sirloin Steak Stir Fry

Step 1: Remove your top sirloin steak from the fridge. Using a very sharp knife, thinly slice the steak against the grain while it is still chilled because this will help you slice it easier. Season the meat with kosher salt and cracked pepper. Once it is sliced let it come toward room temperature which will let it sear easier in the skillet. 

Step 2: Add all the sauce ingredients into a large jar with a tight fitting lid. Shake the jar very well – make it a little kitchen workout. It should be super well combined. 

Step 3: Clean the mushrooms with a damp paper towel. Remove the stems, which you can save for the next time you make broth. Once they are mostly clean of dirt, chop them into even slices. Wash and peel the carrots before slicing. Trim the woody stems off the asparagus.   

Step 4: Start by warming the large skillet. Once it is warm, drizzle in enough avocado oil to coat the bottom of the pan. Once the oil is heated, add the mushrooms in a single layer to brown them, approximately 2-3 minutes on each side. Remove them to a plate and add oil as needed and cook the carrots for approximately 5 minutes, adding 2 tsp of water to help them steam a bit if needed. Finally, cook the asparagus, approximately 4 minutes, adding water if needed. 

Step 5: Add more oil as needed. Cook the thinly sliced and seasoned beef 5-6 pieces at a time. You really don’t want to overcrowd the pan. Crowding the pan means the temperature of the oil drops which won’t allow the meat to brown, and browning is flavor! Each piece will take only approximately 30 seconds on each side so it will go quickly. 

Step 6: Once the pan is empty, pour the sauce in over medium heat. Using a rubber spatula, move the sauce around and gently encourage any browning from the meat to release into the sauce. It will thicken and heat within 3-4 minutes.

Storing & Reheating

Storing: The best way to store your leftover Top Sirloin Steak Stir Fry is to use an airtight glass container and it will last 5 days in the fridge. 

Reheating: You can reheat this easily in the microwave for approximately 2 minutes, or on the stove top in a cast iron skillet over medium low with a splash of water.

Stir-Fry Ingredients: 

  • 23 tablespoon avocado oil, as needed
  • 1 ½ pounds top sirloin steak, highly recommend Country Natural Beef
  • 1 pound asparagus, trimmed and sliced into 2 inch pieces on a bias
  • ¾ pound shiitake mushrooms, stems removed and sliced
  • 3 medium carrots, peeled, sliced into ½ inch strips

Stir-Fry Sauce:

  • 1/2 cup orange juice  
  • 1/4 cup coconut aminos 
  • 1/4 cup tamari * substitute for coconut aminos if doing Whole30
  • 1 tablespoons rice vinegar
  • 1 tablespoon grated ginger root
  • 1 tablespoon sesame oil 
  • 2 garlic cloves, minced
  • 2 teaspoons arrowroot starch

Garnish (optional) 

  • ¼ cup cashews, roughly chopped
  • 2 tablespoon sesame seeds
  • Salt & Pepper

 


Instructions

2. Add all the sauce ingredients into a large jar with a tight fitting lid. Shake the jar very well until mixed thoroughly.   

3. Preheat a large skillet then drizzle in enough avocado oil to coat the bottom of the pan. Once heated, add the mushrooms in a single layer and cook approximately 2-3 minutes on each side until browned. Remove them to a plate and add oil as needed and cook the carrots for approximately 5 minutes, adding 2 tsp of water to help them steam a bit if needed. Finally, cook the asparagus, approximately 4 minutes, adding water if needed.

4: Add more oil as needed. Cook your top sirloin slices 5-6 pieces at a time, getting the pan hot between each batch. Each piece will take only approximately 30 seconds on each side so it will go quickly.

5. With the meat and vegetables cooked, pour the sauce in over medium heat. Using a rubber spatula, move the sauce around and gently encourage any browning from the meat to release into the sauce. It will thicken and heat within 3-4 minutes. 

6. Add the meat and vegetables back into the sauce. Warm through. Serve with the garnishes.
