Who loves reducing food waste, eating delicious food and trying new things? YESSSS I know you do, because you’re awesome. I am sharing my Papaya Seed Dressing on this springy salad: It is something truly special because it’s made from something that normally gets discarded as waste, and what’s not to like about that? Especially since the finished product ends up being something I CANNOT get enough of when I have it on hand. On top of everything papaya seeds are detoxifying, anti inflammatory and improve digestion. Since none of us are traveling…this is also a nice way to feel tropical even on a rainy day in May because Central Oregon spring is weird, man.

Papaya Seed Dressing

Instructions

Add the following to your food processor:

  • 1/4 Cup Papaya Seeds
  • 1/2 Cup Papaya
  • 1 Tbsp Dijon Mustard
  • 1 Clove Garlic
  • 2 Tbsp Rice Vinegar
  • 1-2 Medjool Dates, chopped (start with 1 and add as needed to desired sweetness)
  • Salt and Pepper to taste

Drizzle in 1/2 Cup avocado oil as you blend it all up.

Once smooth and creamy, top your favorite springy salad with it.
